Smith's Wine Bar & Diner
I have conceptualized, constructed and operated nine restaurants to date. My two brands can be found at http://www.kingsleys.com.au and most recently http://www.chophouse.com.au I focus on quality, simplicity and consistency to produce brands that are familiar and comforting. My restaurants are found in capital cities where they have a great following with blue chip executives and tourists alike. I like to have fun while working but quality and the story about how the quality is achieved is paramount. Every steak has a breeding story every vegetable can be sourced to it's grower. We will have very cool music that people understand and lighting is always a focus to make people feel at home.
This is a brand I trust will be synonymous with the 20 - 40 yo corporate market. The type of young executive who will come in for coffee in the morning, a sandwich for lunch then dinner with two clients. Fun fast and professional.
Black and White is my initial thought as this will be heavily featured in the fitout along with recycled timber and old wares such as a great collection of antique coffee perculators, old decanters and old crockery. It needs to be simple and timeless.
